White Bean Chicken Chile

White Bean Chicken Chile

This is by far the best chile, or chili, we have ever eaten!  It is very easy for anyone on the go. Left overs freeze well (if there is any!).  Make a side of corn bread and enjoy.  This is a great dish to bring to any party or potluck!  If you want extra chile for home you best make a second pot as your party chili bowl will come home empty. Serve with tortilla or corn chips broken up on top, cheddar cheese, sour cream, cilantro, avocado, lime, or whatever you like.

  1. Cook chicken breasts and shred. You can cook the chicken in many ways - pan fry, broil, bake, steam, grill, or any way you prefer. You can even buy a rotisserie chicken from the store and use just the breasts or all the meat if you like double meat.
  2. Throw all the ingredients into the crock pot (including liquids from the canned beans and chili's). Cook about four hours on high.
