Greatest Dry Rub

Greatest Dry Rub came about through lots of trial and error.  Dry rubs can be added up to 24 hours in advance.  Notice that this dry rub has no Salt in it?

You never want to add salt to meat and fish more then 30-60 minutes before cooking or smoking.   Adding salt will certainly flavor the meat, but will also dehydrate your meats.  Always add a liberal amount of salt no more than one hour before meats get smoked or grilled.

  1. Mix all ingredients together. Use liberally on all meats and fish before cooking or smoking. For ribs and chicken pieces add rub and salt 1 hour before smoking. For large cuts of meats, like roasts, liberally add rub on up to 12 hours before smoking. Again, add liberal salt 1 hour before smoking.
Recipe Notes

Use liberally on all meats and fish before cooking or smoking. For large cuts of meats rub on up to 12 hours in advance of smoking.  Greatest dry rub mixture will store well in a sealed container assuming you allow the brown sugar to dry out on a cookie sheet at room temperature.
